Roasted Radishes with Chive Dill Yogurt

This spicy little vegetable mellows out beautifully when roasted—and if you haven’t tried it this way, you absolutely have to! Paired with the herby tang of the yogurt, it makes a delicious and simple afternoon snack, side dish, or appetizer.

INGREDIENTS

Roasted Radishes:

  • 10-15 radishes, cut into quarters (or halves depending on size)

  • 1 tsp of olive oil

  • salt & pepper to taste

Yogurt Dip:

  • ½ cup of yogurt

  • 1 small garlic clove crushed (this also can be omitted if you want to keep it light and fresh)

  • 1 tbsp of chopped chives

  • 1 tbsp of chopped dill

  • ½ tsp of lemon zest

  • salt & pepper to taste

INSTRUCTIONS

(1) Preheat oven at 400°F (or use an air fryer at 400°F).

(2) Cut radishes in quarters or halves, toss in with olive oil, salt & pepper. Place on baking tray to go in oven for 20 minutes (or until slightly charred). Or in an air fryer for 15 minutes shaking half-way through.

(3) In a small bowl, mix together yogurt, herbs, garlic, salt & pepper. Smear a generous amount on a serving plate.

(4) Once radishes are roasted, place on top of yogurt smeared on plate, and top with some lemon zest. Enjoy immediately!
